Chocolate Caramel Fudge Cake
(Joshua's Favorite)
3 cups flour 2 cups sugar
6 Tablespoons Hershey's cocoa 2 teaspoons baking soda
1 teaspoon salt 2 Tablespoons vinegar
2 Tablespoons vanilla 12 Tablespoons vegetable oil
2 cups cold water
Mix all ingredients in order given. Stir until well mixed. Pour into 9 X 13 baking dish. Bake
at 350 degrees Fahrenheit for 35 minutes (touch cake to make sure it springs back or test
to make sure it's done by inserting a toothpick (should come out clean)). Allow to cool 5
minutes. Then every 1" poke a whole into the cake with a knife making an "X". Pour into
each hole Ice Cream Caramel Sauce. Then melt 1 jar of Ice Cream Hot Fudge Sauce and
pour over top of cake. Spread evenly.
Chicken Noodle Soup
Boil 1 whole chicken. Remove from stock (reserve stock). Cool and
remove from bones. Pull into pieces.
1 pound mini carrots (sliced thinly)
5 stalks celery (sliced thinly)
2 teaspoons thyme (dried)
2 Tablespoons Parsley leaves (dried)
1 medium onion (chopped finely)
Olive Oil
Swanson's Chicken Stock
24 oz package Mrs. Reames Frozen Egg Noodles (or homemade
noodles)
Salt and Pepper to taste
In large pan drizzle olive oil. Heat. Add onions sauté, add thyme,
parsley flakes, carrots and celery. Meanwhile heat the chicken stock to
boiling. Adding more chicken stock (I use Swanson's) if needed. Once
boiling add noodles (homemade or Mrs. Reames frozen 24 oz). Stir
often cooking 15 - 20 minutes. Add carrot, celery & onion mixture.
Cook an additional 30-40 minutes on simmer. This can also be put in
the crockpot if desired.
Taco Casserole
2 pounds hamburger 2 cups Water
2 pkgs. Taco seasoning mix 2 cans pinto beans, drained
1/2 (7 oz.) pkg. Doritos, crushed Shredded Cheddar Cheese
Brown hamburger; drain. Add taco seasoning and water. Simmer
about 30 minutes. Add beans and Doritos. Put in 9X13" pan. Top
with cheese and put in 300 degree oven until cheese melts. Serve
with taco sauce.
Chicken Casserole
2 cups diced, cooked chicken 1 sm. Onion minced
2 cups uncooked macaroni 2 cups chicken broth
1 cup grated cheddar cheese
2 cans cream of chicken soup 1/2 tsp. Salt
Mix well and pour into greased 9 X 13" pan. Cover with foil
and refrigerate overnight. Uncover and bake 1 hour at 350
degrees
Corn & Chicken Macaroni Casserole
1 Cup Macaroni (uncooked) 1 Can Whole Kernel Corn (undrained)
2 Cans Cream Style Corn 1/2 pound Velveta (cubed)
1 stick butter 1 large can chicken shredded
Salt & Pepper to Taste
Melt butter and Velveta in microwave. Put macaroni, corn, chicken in
9"X13" baking dish. Pour butter and velveta over top. Salt & Pepper to
taste. Stir to mix. Bake in 350 degree oven for 45 minutes to 1 hour
(covered with foil for first half of baking time)
Grandma's Vegetable Soup
3 lbs. Ground round steak 1 small soup bone
1 bunch carrots, cut up 1 bunch celery, cut up
1/2 cup rice 1/2 cup barley
1 cup Lima beans 1/2 cup dried peas
1 (46 oz.) can V-8 1 cup northern beans
2 lbs. Potatoes, chopped 2 cups tomatoes
salt to taste onion (optional)
Cook slow about 300 degrees all day, stirring occasionally. Add water, as desired for
thickness or soup. Good cooked in electric roaster or crockpot
Quick and Easy Casserole
1 package Refrigerator Biscuits
1 can Dinty Moore Beef Stew
Put stew in greased casserole (1-1/2 quart); top with biscuits. Bake at
375 degrees for 30-35 minutes or until biscuits are brown on top. Serve
with tossed salad and dessert for entire meal; quick and easy.
Potato Corn Chowder
Peel & Dice 8-10 potatoes 1 Can Whole Kernel Corn
1 Can Cream Style Corn Salt & Pepper
4 TBS Butter Milk
Diced Ham (1/2 pound) 1 tsp Garlic if desired
Peel and dice potatoes. Cook until potatoes are just starting
to get tender. Drain most of the water from the potatoes. I
leave just about 1/2 cup of water. Add drained whole kernel
corn, cream style corn, ham, salt and pepper, butter & garlic.
Cover with milk. Simmer until potatoes are done. If desired
thicken with corn starch.
Cream of Cauliflower Soup (or Broccoli)
1 cup cauliflower, broccoli, or 1/2 cup each 2 cup milk
1 cup chopped Velveeta 1/4 tsp. Salt
1 Tbs. Butter Cornstarch to thicken
Chop vegetables fine. Put in microwave-proof bowl. Almost cover veggies with water and
salt. Cook about 3 minutes on high or just until tender. Do Not Drain. Add cheese and
butter. Put back in microwave for 1 minute on high. When cheese is melted add milk. Heat
1-1/2 minutes on high. Mix cornstarch and water to slightly thicken soup, if desired. Also
makes great broccoli soup.
Hot Chicken Sandwiches
1 Whole Chicken
Stew chicken. Remove from bones & shred (do not chop) by hand.
Thicken chicken broth into gravy. Add chicken.
Serve over mashed potatoes or bread.
